Sushi by Bou Debuts in West Palm Beach

The modern omakase concept also plans to open a Boca Raton location.

Sushi by Bou, a contemporary speakeasy-inspired omakase concept famous for reinventing the traditional omakase experience, has recently opened a new location in West Palm Beach. The cozy omakase bar is nestled inside the Vinyl Fish Club, located at 340 West Clematis St., and can accommodate up to 12 guests at a time.

Simplevenue founders Michael Sinensky and Erika London work alongside Richie Romero, a well-known hospitality and nightlife expert who was recently appointed Partner and Chief Hospitality Officer. They plan to expand their business and open at least 12 new locations in 2023, including Palm Beach County.

Simplevenue has a knack for transforming underutilized spaces in existing venues into unique micro-restaurant concepts. One of its standout brands, Sushi by Bou, has revolutionized the sushi counter experience in the U.S. With a contemporary twist on the traditional old-school sushi counter, Sushi by Bou offers an authentic glimpse into Japan’s vibrant food culture. The personalized culinary experience is unique and adds to the immersive hustle and bustle of the atmosphere.

When dining at Sushi by Bou’s bespoke speakeasy, guests can expect a personalized experience at each location. The West Palm Beach location showcases a stunning array of pinks, greens, blues, and floral patterns inspired by Palm Beach County. Guests will be treated to a timed Omakase experience, where Sushi by Bou’s skilled chefs will curate a delicious menu and craft unique libations for each guest.

Delicacies featured include:

  • Hamachi (yellowtail)
  • Botan Ebi (spotted prawn)
  • Ikura (salmon roe)
  • Hotate (scallop)
  • O-Toro (fatty tuna)
  • Unagi (bbq eel)
  • SBB’s signature Wagyuni (‘surf and turf’)

Hand rolls and other sushi favorites utilizing the freshest highest-quality fish sourced locally and globally are available upon request, along with additional a la carte specialties and seasonal mochi ice cream for dessert. The cost is $60 for a 12-course omakase; $125 for a 17-course omakase.

Hours of operation are Tuesday through Sunday, from 5 p.m. to 12 a.m. Seating times are 5 p.m., 6:15 p.m., 7:30 p.m., 8:45 p.m., and 10 p.m. (and 11:15 p.m. on Friday and Saturday). Each seating is 60 minutes.
