New Chefs Takeover Four Seasons and Mayfair Grill

Expect elevated cuisine experiences.

With a global journey spanning Paris, Melbourne and the Maldives, Chef Edouard Deplus has joined Four Seasons Hotel Miami as executive chef. The expert in French cooking is overseeing the hotel’s rooftop Edge Brasserie and Cocktail Bar and poolside restaurant Bahía as well as special events and in-room dining.

“The culinary scene in Brickell and Miami is truly energizing, and I am excited to become part of it as I join this extraordinary team,” says Deplus who has been visiting Miami for many years and has always loved the city.

After a promising start in Paris alongside Michelin-starred Chef Yannick Alleno at Le Meurice and several renowned Parisian brasseries, Deplus’ passion for travel and exploration took him to Australia, where he worked with acclaimed Chef Philippe Mouchel, known as Australia’s favorite French chef. His culinary journey continued back to Europe, with time at La Dama in Barcelona and Maison Nô in Lyon, before his adventurous spirit led him to French Polynesia, then the Maldives, marking his first tenure with Four Seasons.

New Chef at the Mayfair

Chef Giorgio Rapicavoli has taken the helm at Mayfair Grill in Coconut Grove.

He is known for his creative vision at Eating House and Luca Osteria. Central to his technique is the open flame grill, which escalates flavor profiles and creates deliciously charred food.

Noteworthy dishes include Avocado “Caprese” with Florida burrata, purple basil, and citrus vinegar; Sebastian Inlet Clams with white beans, chorizo dashi and grilled bread; Jalapeño Pesto Green Pasta with stracciatella, Florida basil and cashews; Lobster Ravioli with thermidor sauce, brandy, shallot and citrus; Pasture-Raised Chicken with cilantro salsa verde and grilled lime; and Prawns with preserved lemon and Calabrian chili.

He is starting with daily dinner and happy hour, but the concept will expand in October to include weekend brunch and lunch, culminating in the full dining experience with all meal periods by month’s end.
